Summer Dinner Party!
Even though it is now thoroughly fall, I have one more post to end my summer reminiscence. Continuing my dinner party idea, I decided to highlight all the fresh produce and throw a salad-themed dinner party! Trying to keep it light, I felt a salad dinner party was fitting for the end of June. It was a lot of fun to use fresh herbs I grew in my garden to make the various salad dishes. The four salads I served were a refreshing pea-pesto pasta salad (try saying that 5 times fast!) with basil from the garden, a spinach salad with strawberries, almonds and homemade poppy seed dressing, and a southwestern quinoa salad with avocado, corn, fresh parsley and jalapeños from my garden. Finally for dessert, we had a fruit salad that I served in a water melon basket that my mom taught me how to make several years ago. No summer dinner is complete without lemonade, so I made some homemade pink lemonade and garnished it with fresh mint from, you guessed it, my garden! It was so fun being able to highlight the things I grew in my garden, and catch up with all my friends! I can't wait to throw my next dinner party soon!
